Looking for a spicy creamy and delicious soup? It's fast and easy and possible in vegan version.
Oats milk
It's creamy, it's easy, it's cheap and it's vegan! And you can use it in many different ways.
ingredients:
. 1 cup of oats
. 3 cups of water
. a pinch of salt
. a sieve
. a blender or a mortar
Let the oats soak in water with a pinch of salt, for at least 10 hours. Pour it through a sieve and blend or crush the oats in the mortar. Mix the blended oats and the water and pour it through the sieve again. And that's it! You can keep it in the fridge for about 3 days. Don't forget to shake before use :)
I love to cook and discover new recipes. Before I start coking I usealy look for new recipes and give my own twist to it. Of course it doesn't always work out, but the ones that do are to be found on this page.
I've noticed that my body feels most healthy when I eat meat and fish once in a while, but I like to cook vegetarian or vegan. I agree with the fact that we don't need it every day and that it's better not to buy meat, dairy products or eggs. And I feel more creative with certain restrains.
So, you can find vegan, vegetarian and normal recipes.

Breakfast at a Romanian friend's place resulted in a fresh salad and some bread with zacuscă, a creamy paste made from only vegetables, or at least that's what I think it is. With the idea of making it myself, I went in search of the recipe. Nowhere to be found in English... 'Lets just try to make it than' And I got home with some vegetables that made a lovely paste/smushy you can eat with potato or rice. You can also make a soup out of it, just add some more water.
ingredients
. 2 onions
. half clove of garlic
. 2 carrots
. 1 big potato (or 2 small ones)
. 1 red, 1 yellow paprika
. 1 courgette
. 1 aubergine
. 2 tomatoes
. 2 hands of already soaked white beans (or 1 can)
. 2 tablespoons vinegar
. oil
. sugar
. salt
. black pepper
. spicy pepper
. oregano, thyme, basil
Chop all the vegetables in little pieces. First 2 spoons of oil in a pan and fry the union and garlic just before it turns brown. Add the chopped carrot and fry for 5 min, as you stir. Now add the paprika, again fry 5 min. Now add the courgette, aubergine, tomato and potato. Again, 5 min of frying before you add water until all the vegetables are just under water. Add the herbs and spices and vinegar and let this simmer with a lid on the pan for at least one hour. Most of the vegetables will be soft now. Mash everything with the potato masher. Add the beans and simmer until these are soft (about 30 min). You can add a little bit more sugar, vinegar or salt if it misses taste. It's a good sauce to go with rice or some bread.
If you want a paste for on bread, simmer until it's thick enough. You can put it in a jar and keep it in the fridge. If you want a soup, just add more water.
Summer salmon salad
A jummy, fast and fresh salad with the most tasty honey-mustard dressing! Lovely with a BBQ or on a hot summer evening.
ingredients:
.100 gr of lettuce
. 1 avocado
. 1 piece of salmon (prepared on the bbq/in the pan) / 200 gr of smoked salmon
. 6 pieces of sun-dried tomatoes
. 3 tablespoons of capers
. 1 tablespoon of honey
. 1 tablespoon of mustard
. 1 tablespoon of olive oil
. 1 tablespoon of lemon juice
Slice the avocado and sun-dried tomatoes in little pieces. Put them with the salmon, lettuce and capers in one bowl. For the dressing: put the honey, mustard, olive oil and lemon in one cup and stir until everything is mixed. Pour the dressing over the salad and enjoy!
A very tasty and spicy soup for 2 people.

. oil
. 1 paprika
. 1 union
. 3 cloves of garlic
. Mexican spices
. 700 ml vegetable / chicken stock
. 250 ml crème fraiche / vegan rice cream
. 2 tablespoons ketchup
. Tabasco optional
Chop the onion, garlic and paprika. Fry first the union with the garlic until it start to be a bit brownish, and add the paprika and a tablespoon of the Mexican spices. Fry this 5 min on high fire, and add the stock. Cook this 10/15 min (make sure the paprika is soft) and blend everything till there’s no big piece left. Now add the cream, ketchup and the Tabasco if you like it spicy and mix. Nice to eat with toasted bread and guacamole.
